Baked Beans and Sausage
Ingredients:

½ cup water
·
1 tablespoon molasses
·
2 tablespoons tomato sauce
·
1/8 teaspoon salt
·
1 chopped onion
·
Ground pepper
·
215-ounces rinsed navy beans
·
9-ounces cooked sausage-cooked
·
4 cups of chopped collard greens
Preparation:
1)
Mix
water, barbecue sauce, molasses and tomato sauce.
2)
Heat
over medium heat. Add collard and onions for 3-5 minutes. Add sausage until it
turns brown.
3)
Put
heat to medium-low, add sauce mix and beans. Stir, cook for 3 minutes.

Catfish Amandine
Ingredients:

1 tablespoon virgin-oil
·
Tablespoon butter
·
3 cloves garlic
·
¼ sliced almonds
·
½ cup low fat milk
·
1 large egg
·
1/3 cup flour
·
½ teaspoon of cayenne pepper
·
½ teaspoon salt
·
2 tablespoons lemon juice
·
1 pound catfish
·
1 tablespoon fresh parsley
Preparation
1)
Heat1
teaspoon butter and oil. Add garlic and almonds and cook until brown. set aside
2)
Dip
fish in egg and milk mixture. Mix salt, flour and cayenne and dip the fish.
3)
Heat 1
½ teaspoons of oil and add fish. Cook till brown.
4)
Heat
almond-garlic sauce, add lemon juice. Pour sauce over cooked fish &
sprinkle with parsley.
3. Chile lime Veggie Noodle
Ingredients:

½ cup sherry
·
2 tablespoons lime juice
·
2 tablespoons garlic sauce
·
1 teaspoon canola oil
·
3 cups of mushrooms
·
6 cups green cabbage
·
1 bunch scallions
·
2 red peppers
·
8 ounces spaghetti
·
4 large eggs
Preparation:
- Cook spaghetti
- Mix soy sauce, sugar, lime juice, and chile-garlic
- Cook eggs to make omelet. Cut into strips.
- Add 1 tablespoon oil, pepper and mushrooms. Fry for2-minutes. Add cabbage and stir for 3-minutes. Add the noodle and chile-lime. Add omelet strips and stir and sprinkle scallions.
4. Beer Battered Fish Tacos with Avocado Salsa & Tomato
Ingredients:
Avocado Salsa & Tomato
- 1/4 teaspoon salt
- 1/4 cup red onion

1 large tomato
·
1/8 teaspoon pepper
·
1/4 cup fresh cilantro
·
1/4 cup fresh cilantro

1/2 minced avocado
·
2 tablespoons lime-juice
5. Fish Tacos
- 1/8 teaspoon cumin
- 3 tablespoons flour
- 8 ounces tilapia fillet
- 4 corn tortillas
- 1/8 teaspoon pepper
- 1/8 teaspoon salt
- 1/3 cup beer
- 2 teaspoons canola oil
Preparation:

Prepare
salsa: Mix onion, jalapeno, tomato, lime juice, pepper and salt. Add cilantro
and avocado.
2)
Prepare
tacos: Mix cumin, flour, cayenne, and salt. Add beer and stir to make batter.
3)
Coat
tilapia in batter. Heat oil and add fish. Coot until golden brown. Serve fish
with salsa and tortillas.
4)
Serve
the fish with tortillas and the salsa.
